Wine Me Wednesday: Wine in a Box

Hello readers!  ...if there are still any of you out there after my extended absence... sorry about that, lo siento.

Quite a lot has happened since my last post... not an excuse, just an explanation.  I began a life of single foster parenthood with the Boxer Transfer Network (BTN), got a new job and started graduate school all within about a month and a half of each other.  Needless to say, I sometimes feel like a candle that's burning on both ends and my field placements are still several quarters down the line!

The foster parenting of rescued dogs began with a flyer.  A friend had asked me to help the BTN by making a Facebook-friendly flyer to help with one of their fundraisers for a sweet dog named Dante (poor guy had to have one of his eyes surgically removed due to a health issue, but he's doing great now!)  Then a little under a week later, my first furry foster kid came into my life.  Poor little thing picked up a case of kennel cough and couldn't be around other dogs or cats so "fur baby-less" me got permission from the best landlord of all time and let the little lady stay at my place until she found her forever family.  Cool thing about that is that her new family are friends of mine and they have plenty of fur-baby siblings for her to hang out with.  So, I still get to visit her and she's safe and happy with a new family that won't abuse her anymore like the one that she had prior to BTN's rescue.  I sure do love a happy ending!

Then I picked up my second foster fur-baby on February 1.  His name is Topper and he's a Boston Terrier/Pit Bull Terrier mix, handsome as can be, and becoming an amazing little guy.  Still looking for his forever family, T (as I tend to call him) is a little over 1 year old, 36.5 pounds according to his last vet visit, neutered, up to date on his shots, micro-chipped and extremely smart and playful.  He's been going to daycare for a couple of months now and his behavior has improved exponentially from those first few weeks.  He's great with other playful dogs, both big and small, and is learning how to act around children.  T is a very social, lovable little man but sometimes his enthusiasm is a bit much for smaller humans.  He met a puppy over the weekend and was so gentle playing with her that my heart swelled with pride for the little fur man.  I'm really hoping he finds his forever family soon because he deserves it and it is becoming increasingly difficult to think of him moving on from my life.

School is going decently well, I haven't put much effort into it thus far and the B I'll be getting in the class shows that.  In June, I'll be starting my next quarter with 2 courses.  I'm really hoping T finds his new family by then because I have a hard time focusing on school work when he's around.

Work is also going well and I'm enjoying the "team spirit" we have.  It also doesn't hurt that I get to work from home so my only commute is driving T to daycare 4 days a week.  My dad has been a real sport and picks him up for me every day because my schedule and the daycare schedule aren't exactly synced up.

Now, back to the spirit of Solo Culinary Adventures- Wine Me Wednesday!  I do enjoy a glass or 2 of wine from time to time and find that leaving an opened bottle in the fridge for more than a day or 2 simply doesn't work.  Rather than sucking it up and drinking a whole bottle in one evening with daycare and work in the morning (or worse, pouring a glass of vinegar), I've become rather fond of boxed wines.  Tonight I enjoyed a nice Moscato (yep, sure thing!  Moscato again) out of the box from Almaden Vineyards.  It's sweet, refreshing and a great way to end the day.  The thing I enjoy most about boxed wines is that you can drink a glass or 2, then a week or so later you can enjoy another glass without fear of it going bad because no air gets in!  Fabulous!

Of course, I do still enjoy wine from a bottle.  However, the boxed wines are extremely convenient and don't put too large a dent in the bank.  I got the box of Almaden Vineyards Moscato at the state store for about $20... that's 5 liters of wine for $20 and it's rather tasty... score!

What kinds of wine do you enjoy?
